What is HACCP?
HACCP is a systematic, science-based approach that identifies, evaluates and controls hazards, biological, chemical and physical, at specific critical control points in the food chain, rather than relying only on end-product testing. Its seven principles are conducting a hazard analysis, identifying critical control points, establishing critical limits, establishing monitoring procedures, establishing corrective actions, establishing verification procedures and maintaining records and documentation.
HACCP is built into ISO 22000:2018 and FSSC 22000 and is often implemented alongside prerequisite programmes such as GMP, sanitation, pest control, supplier approval, traceability and recall, and calibration.
